  1. Deep fry eggplant and keep aside
  2. Cook 1 cup of green mung däl
  3. When däl is cooked add 3 cups of rice and cook it while constantly stirring it
  4. In another pan heath the ghee and prepare masala paste
Masala paste:
  1. Add and fry one after another 2 tbsp shahi jeera 4 tbsp ginger paste 4 tbsp fresh mint leaves paste 100 g sesame paste (grind with water) 100 g bengal gram däl or ground nut paste 50 g cashew nut or almonds (badam) paste 1cup tomato pure 1 tbsp pepper powder 2 1/2 tbsp coriander powder 1/2 tbsp garam masala powder 2-3 lemon's juice
  2. Add salt
  3. When ghee separates from paste add eggplant cook for 5 min and add it to the kitcheri when rice and däl are fully cooked. (if needed add some water)
